We roast only 12 kilograms (26 lbs.) of coffee beans at a time and Vacuum-pack in high-quality foil bags with one-way valves. The coffee is given maximum protection. Remember that the time between roasting and brewing will affect flavour - the shorter the better! Jamaica produces about 4,000,000 lbs of coffee beans each year, two thirds of which is Blue Mountain coffee. Almost 90% of Jamaica’s coffee exports go to Japan so the quantity otherwise available is quite small. Unfortunately it has a way of multiplying after it leaves Jamaica, indicating that it is sometimes mixed with other lesser coffees.
